The Burnett Salmon is blue grey above and silvery yellow below with faint lines running from head to tail along the rows of scales. The pectoral fins are bright yellow , the ventrals pale yellow; all other fins are dusky.
Found in bays and estuaries, the fish can be caught on minnow style lures or live baits. It is a large fish attaining a weight of 30 Kg; many prefer its flavour to that of the highly-regarded Barramundi, in whose company Salmon are often found.
The fish poses problems with filleting because of the great bony nodules that develop along the backbone with age. Probably the best way of removing fillets without losing too much flesh is to make incisions down both sides of the fillet and then peeling the fillet from the backbone.
